Ingredients
  • 4 Alexia Artisan Sweet Potato Rolls
  • 4 slices applewood smoked bacon
  • 1 cup baby spinach
  • 1 Roma tomato, thinly sliced
  • 4 fried eggs
  • Guacamole
  • 2 California avocados, halved, seeded and peeled
  • 1 Roma tomato, diced
  • Juice of ½ lime
  • Kosher salt and freshly ground black pepper, to taste
Instructions
  1. In a small bowl, gently mash avocados using a potato masher. Add tomato, lime juice, salt and pepper, to taste, and gently toss to combine; set aside.
  2. Preheat oven to 350 F. Line a baking sheet with parchment paper. Place Sweet Potato Rolls onto prepared baking sheet and bake according to package instructions; let cool before splitting each roll.
  3. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  4. Serve sandwiches on Alexia Artisan Sweet Potato Rolls with spinach, tomato, egg, bacon and guacamole.
