Healthy Pineapple And Coconut Rice - Be Fit Be Cool AAPI
Ingredients
  • Cashew Nuts 10 Grams
  • Almonds 10 Grams
  • Onion (Chopped) 1 Large
  • Bell Peppers (all Three) 2 Tablespoons
  • Green Chilies (Finely Chopped) 1 Tablespoons
  • Salt . To Taste
  • Pineapple (Diced) 1 Cup
  • Mustard Paste 1 Tablespoons
  • Fresh Coconut (Grated) ½ Cup
  • Mint Leaves 2 Teaspoons
  • Coriander Leaves 2 Teaspoons
  • Rice (Boiled) 2 Cup
Instructions
  1. In a pan, add cashew nuts, almonds, chopped onions, bell peppers, green chilies and cook till the onions are transparent.
  2. Add salt and pine apple dices and cook for few seconds
  3. Add mustard paste, grated coconut and mix well.
  4. Finally add mint leaves, coriander, rice and mix well.
  5. Serve it hot.
