Vegetable Fried Rice( Chinese Recipe )

This is an indispensable part of chinese meals. To keep the rice grains separate, spread the cooked rice grains on a tray and allow it to cool. Rub a little oil on the cooked rice and keep aside till you require it.
- 3 cups chinese rice
- ½ cup french beans , cut diagonally into thin strips
- ½ cup carrot , cut into long thin strips
- ½ cup capsicum , cut into long thin strips
- ¾ cup bean sprouts
- ¼ cup sliced mushrooms (khumbh)
- 1 tbsp chopped celery
- 1 cup chopped spring onions whites
- 1 tsp soy sauce
- 1 cup chopped spring onion greens
- 1 tbsp oil
- salt to taste
- Heat the oil in a wok over a high flame, add the french beans, carrots, capsicum, bean sprouts, mushrooms, celery, spring onion whites and sauté for 3 to 4 minutes till the vegetables soften.
- Add the rice, soya sauce, spring onion greens and salt. Mix well and sauté for 2 minutes.
- Serve hot.
