- 1 salmon (whole and cleaned)
- 250 ml fish stock/wine
- 1 lemon
- ½ kg cooked prawns
- 2 sliced cucumbers
- ½ kg tomatoes
- Tomato Filling:
- 150 gm hung yoghurt
- 2 tsp cheese spread
- 2 tsp chopped herbs
- ¼sp garlic paste
- Salt and pepper to taste
- Prawn mayonnaise
- 125 ml mayonnaise
- 100 gm cooked shrimps
- 1 tbsp reduced fish stock
- ½ tsp paprika
- 1 tbsp cream
- Salt and pepper to taste
- Arrange the fish in a tin. Pour the stock and add lemons. Cover with foil and poach at 170 degrees c for 35-40 minutes.
- To prepare the tomato filling, combine all the ingredients and spoon into the tomatoes.
- Arrange the fish on a cool platter. Decorate with prawns, cucumber and tomatoes.
- Combine ingredients for the shrimp mayonnaise and serve with the fish.
