Ingredients
  • 1 salmon (whole and cleaned)
  • 250 ml fish stock/wine
  • 1 lemon
  • ½ kg cooked prawns
  • 2 sliced cucumbers
  • ½ kg tomatoes
  • Tomato Filling:
  • 150 gm hung yoghurt
  • 2 tsp cheese spread
  • 2 tsp chopped herbs
  • ¼sp garlic paste
  • Salt and pepper to taste
  • Prawn mayonnaise
  • 125 ml mayonnaise
  • 100 gm cooked shrimps
  • 1 tbsp reduced fish stock
  • ½ tsp paprika
  • 1 tbsp cream
  • Salt and pepper to taste
Instructions
  1. Arrange the fish in a tin. Pour the stock and add lemons. Cover with foil and poach at 170 degrees c for 35-40 minutes.
  2. To prepare the tomato filling, combine all the ingredients and spoon into the tomatoes.
  3. Arrange the fish on a cool platter. Decorate with prawns, cucumber and tomatoes.
  4. Combine ingredients for the shrimp mayonnaise and serve with the fish.
