Cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairi+ras, meaning raw/green mango + juice. This is one of my favorite preparation using green mango.
- Salt To Taste
- Raw Mango 1 Numbers
- Hing 1 Pinch
- Curry Leaves 2 Springs
- Fenugreek Seeds ¼ Teaspoons
- Mustard Seeds ½ Teaspoons
- Red Chilly 1 Tablespoons
- Oil 2 Tablespoons
- Coconut Powder ½ Cup
- Sesame Seeds 2 Tablespoons
- Black Gram Dal 2 Tablespoons
- Jagerry 1 Tablespoons
- Tamarind ½ Cup
- Take a pan add black gram daal, sesame seeds dry roast them, add coconut powder cook this till golden in colour.
- Switch off the flame and make a coarse powder.
- Heat oil in a pan add red chilly, mustard, fenugreek seeds, add curry leaves, pinch of hing, raw mango (cut into small pieces) sauté this,
- add salt, jagerry and add water put the lid on cook for some time, then add tamarind juice, cook it and switch off the flame.
