Egg Sambar

A simple yet impressive sambar recipe made using eggs, yellow lentils, vegetables and Tamarind pulp makes a complete meal which goes perfect with rice.
Ingredients
  • Eggs, boiled 6 Numbers
  • Tur dal, boiled 1 Cup
  • Oil 1 Tablespoons
  • Mustard seeds ½ Teaspoons
  • Onion, chopped 1 Numbers
  • Turmeric powder ¼ Teaspoons
  • Green chillies, slit 4-5 Numbers
  • Curry leaves 2 Springs
  • Mint leaves few Leaf
  • Drumstick 1 Numbers
  • Coriander leaves, chopped 1 Bunch
  • Salt 1 0
  • Tomatoes, chopped 2 Numbers
  • Tamarind juice 1 Cup
  • Water 2 Cup
  • Red chilli powder 1 Teaspoons
  • Sugar (optional) 1 Pinch
  • Fenugreek seeds powder ¼ Teaspoons
  • Cumin seeds ½ Teaspoons
  • Garlic 5-6 Clove
Instructions
  1. In a sauce pot, heat some oil and when it gets hot, add mustard seeds. When they start to splutter, add onions, turmeric and sauté for a while. Add slit green chillies, curry leaves, mint leaves and fry well. Add drumstick pieces, chopped coriander, salt and cook for a minute. Add chopped tomatoes, tamarind juice, water and allow boiling vigorously. Add chilli powder, little sugar (optional), fenugreek seed powder, and mix well. Add dal paste (tur dal boiled and blended in the mixie to make paste) and mix thoroughly well. While the dal is boiling, in a dingchik, crush some cumin seeds and few cloves of garlic. Add this in the sambar and allow it to boil well. Add in the boiled eggs and just boil for a minute and switch off the flame. Serve with hot rice.
