This Mexican rice is cooked with onion powder, garlic powder, and tomato sauce for an easy side dish.
Ingredients
  • Cumin powder - 1 teaspoons.
  • • Tomato puree - 1 cup.
  • • Salt - to taste.
  • • Pepper crushed - 5 numbers.
  • • Onion chopped - 2 numbers.
  • • Garlic crushed - 1 tablespoons.
  • • Bay leaf - 2 numbers.
  • • Olive oil - 2 tablespoons.
  • • Water - 1¾ cup.
  • • Rice - 1 cup.
  • • Stock - 2 cup.
  • • Red & green bell pepper - 1 numbers.
  • • Pinto or kidney beans - 100 grams.
Instructions
  1. Heat olive oil in a pan add bay leaf, crushed garlic, chopped onions, sauteacute; the onions and garlic, add crush pepper, salt, tomato puree, cumin powder, oregano (optional) once it comes to boil, add boiled beans and add vegetable stock, when it boils add soaked rice, cook till almost done, garnish with sauteacute;ed red amp; green bell pepper.
