Nutritious Tendli and Matki Subzi |

A thoughtful variant of the simple tendli subzi made with sprouted matki and soya granuales. Soya granuales enrich this subzi eith its protein, calcium and iron content.
- 2 tsp oil
- ¼ tsp cumin seeds (jeera)
- ¼ cup chopped onions
- ½ tsp ginger-green chilli paste
- 1 cup chopped round gourd (tinda)
- ½ cup sprouted matki (moath beans)
- ½ cup soya granules , soaked and drained
- ¼ tsp turmeric powder (haldi)
- ½ tsp chilli powder
- ½ tsp coriander-cumin seeds powder
- salt to taste
- ¼ cup chopped tomatoes
- For The Garnish
- 2 tbsp chopped coriander (dhania)
- Heat the oil in a pressure cooker and add the cumin seeds.
- When the seeds crackle, add the onions and ginger-green chilli paste and sauté till the onions turn translucent.
- Add the round gourds, matki, soya granules, turmeric powder, chilli powder, coriander-cumin seeds powder, salt and ½ cup of water and pressure cook it for 1 to 2 whistles.
- Allow the steam to escape before opening the lid.
- Just before serving, add the tomatoes and mix well. Serve hot garnished with coriander.
