Kicked Up Chicken Noodle Soup

Ingredients
  • 1 tsp. olive oil
  • 1-15 oz. can of organic, low-sodium chicken noodle soup (I used Health Valley)
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 tbsp. chopped onions
  • 1 clove garlic, chopped
  • 2 handfuls fresh spinach
Instructions
  1. Heat oil in a small pot over a medium heat. Add in carrots, celery, onions, and garlic. Saute for 3 minutes or until veggies are fragrant and beginning to sweat.
  2. Add soup, bring to a boil, and then reduce to a simmer. Toss spinach into the soup. Once your spinach has wilted adjust the seasonings and enjoy!
