Exotic Khakhra Snack

Khakhras are a much healthier alternative to fried puris and team well with this scrumptious vegetable stir-fry.
Ingredients
  • 4 big khakhras (approx. 8 " diameter), broken into pieces
  • ¼ cup sliced onions
  • ¼ cup chopped capsicum
  • ¼ cup shredded cabbage
  • 1 recipe tomato salsa, see below
  • 2 tbsp milk
  • 2 tsp butter
  • salt and freshly ground black pepper (kalimirch) powder to taste
  • To be mixed into a tomato salsa
  • ⅓ cup deseeded and finely chopped tomatoes
  • ¼ cup finely chopped spring onions whites
  • ½ tsp finely chopped garlic (lehsun)
  • ½ tsp finely chopped green chillies
  • ½ tsp sugar
  • ½ tsp cumin seeds (jeera) powder
  • salt and freshly ground black pepper (kalimirch) powder to taste
  • For the garnish
  • 2 tbsp chopped spring onion greens
  • ¼ cup grated processed cheese
Instructions
  1. Heat the butter in a non-stick pan, add the onions and sauté till they turn translucent.
  2. Add the capsicum and cabbage and sauté for 2 to 3 more minutes.
  3. Add the tomato salsa and mix well. Cook for 1 to 2 more minutes.
  4. Add the milk, salt and pepper and bring to boil while stirring continuously.
  5. Transfer the stir-fry into a serving bowl and sprinkle spring onion greens and cheese over it.
  6. Serve immediately with the khakhra pieces.
