Mixed Vegetable Soup is loaded with anti-oxidant rich vegetables like capsicums, tomatoes and cabbage.
- 4 chopped tomatoes
- 2 tbsp chopped cabbage
- 2 tbsp chopped capsicum
- 2 tbsp chopped onions
- 2 bayleaves (tejpatta)
- 2 tsp oil
- salt and black pepper (kalimirch) powder to taste
- Heat the oil and fry the onion for 1 minute.
- Add the tomatoes, cabbage, capsicum, bay leaves and 6 teacups of boiling water and boil for 5 minutes.
- Add salt and pepper.
- Serve hot.

Serve with a heavier main dish.
