Broccoli Crepes with Mexican Green Sauce

This recipe is an example of how native Mexican ingredients are adapted to French pancakes. Broccoli and Mexican green sauce make a very tasty combination.
Ingredients
  • 6 Crepes
  • ¾ cup Mexican Green Sauce
  • For the broccoli filling
  • 1 cup broccoli florets, finely chopped
  • 1 onion, chopped
  • 1 green chilli, chopped
  • 4 tbsp grated cooking cheese
  • 1 tbsp butter
  • salt to taste
  • For the baking
  • 3 tbsp grated cooking cheese
Instructions
  1. For the broccoli filling
  2. Put plenty of salted water to boil. When it starts boiling, add the broccoli florets, switch off the gas, cover and leave for 5 minutes. Drain the broccoli.
  3. Heat the butter and fry the onion for ½ minute. Add the green chilli and the broccoli and fry again for 1 minute. Add very little salt.
  4. Cool and add the cheese. Mix well.
  5. How to proceed:
  6. Fill the crepes with the broccoli mixture and fold each one into a triangle.
  7. Arrange in a baking dish and pour the Mexican green sauce over them.
  8. Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) 20 minutes.
  9. Serve hot.
