These energy-boosting apricot and coconut muesli snacks are sticky, chewy and yummy.
  • 225g (11/2 cups) nut-free toasted muesli
  • 120g (3/4 cup) diced dried apricots
  • 80g (1/2 cup, lightly packed) brown sugar
  • 45g (1/2 cup) desiccated coconut
  • 80ml (1/3 cup) honey
  • 50g unsalted butter, melted
  1. Process muesli, apricot, sugar and coconut in a food processor until finely chopped. Add the honey and butter and process until the mixture is very finely chopped and holds together when squeezed.
  2. Roll tablespoonfuls of the muesli mixture into balls. Place on a lined tray. Place in the fridge for 30 minutes or until set. Store the muesli balls in an airtight container in the fridge for up to 4 days.
