A thoughtful variant of the simple tendli subzi made with sprouted matki and soya granuales. Soya granuales enrich this subzi eith its protein, calcium and iron content.
Ingredients
  • 2 tsp oil
  • ¼ tsp cumin seeds (jeera)
  • ¼ cup chopped onions
  • ½ tsp ginger-green chilli paste
  • 1 cup chopped round gourd (tinda)
  • ½ cup sprouted matki (moath beans)
  • ½ cup soya granules , soaked and drained
  • ¼ tsp turmeric powder (haldi)
  • ½ tsp chilli powder
  • ½ tsp coriander-cumin seeds powder
  • salt to taste
  • ¼ cup chopped tomatoes
  • For The Garnish
  • 2 tbsp chopped coriander (dhania)
Instructions
  1. Heat the oil in a pressure cooker and add the cumin seeds.
  2. When the seeds crackle, add the onions and ginger-green chilli paste and sauté till the onions turn translucent.
  3. Add the round gourds, matki, soya granules, turmeric powder, chilli powder, coriander-cumin seeds powder, salt and ½ cup of water and pressure cook it for 1 to 2 whistles.
  4. Allow the steam to escape before opening the lid.
  5. Just before serving, add the tomatoes and mix well. Serve hot garnished with coriander.
