Easy to handle, bite-sized canapés are perfect for a party. The vegetable canapés described here make use of thin strips of carrot and capsicum perked up with chopped parsley.
- 5 brown bread slices , lightly buttered
- 2 tbsp grated paneer (cottage cheese)
- 1 tbsp cheese spread
- ½ tsp finely chopped parsley
- ¼ tsp finely chopped green chillies
- 1 small carrot , peeled and cut into thin strips
- 1 small capsicum , cut into thin strips
- salt to taste
- Cut each bread slice into two diagonally.
- Mix the paneer, cheese spread, parsley, green chillies and salt.
- Spread this mixture evenly over the buttered side of the bread pieces.
- Put the carrot strips into boiling water for a few minutes. Drain and then chill.
- Arrange two carrot strips and two capsicum strips on top of each bread slice.
- Serve immediately.
