Get ready to recreate the magical mexican cuisine on your tables with the easy enchiladas recipe. The white tortillas are topped with a spicy onion, tomato mix along with the authentic salsa sauce and enjoyed as a starter or snack.
- 1 small sized onion , finely chopped
- 8 white flour tortilla ,
- readily available in the market
- ½ packet of low-fat cream cheese ,
- readily available in the market
- 1 jar hot chunky salsa ,
- readily available in the market
- ¾ cup taco cheese
- (3 cheese blend) ,
- readily available in the market
- 1½ cups shredded leftover or boiled chicken
- Preheat the oven to 350 deg
- Put a little oil in a pan and fry the onions till pink.
- Add the chicken, ½ cup cheese,3/4 cup salsa and cream.
- Stir till cheeses are melted.
- Spoon ⅓ cup of the mixture down the center of each tortilla.
- Roll up and place on a baking dish, drizzle with remaining salsa and sprinkle with cheese.
- Bake till chesses is melted and slightly brown. Serve hot.
