Khakhras are a much healthier alternative to fried puris and team well with this scrumptious vegetable stir-fry.
- 4 big khakhras (approx. 8 " diameter), broken into pieces
- ¼ cup sliced onions
- ¼ cup chopped capsicum
- ¼ cup shredded cabbage
- 1 recipe tomato salsa, see below
- 2 tbsp milk
- 2 tsp butter
- salt and freshly ground black pepper (kalimirch) powder to taste
- To be mixed into a tomato salsa
- ⅓ cup deseeded and finely chopped tomatoes
- ¼ cup finely chopped spring onions whites
- ½ tsp finely chopped garlic (lehsun)
- ½ tsp finely chopped green chillies
- ½ tsp sugar
- ½ tsp cumin seeds (jeera) powder
- salt and freshly ground black pepper (kalimirch) powder to taste
- For the garnish
- 2 tbsp chopped spring onion greens
- ¼ cup grated processed cheese
- Heat the butter in a non-stick pan, add the onions and sauté till they turn translucent.
- Add the capsicum and cabbage and sauté for 2 to 3 more minutes.
- Add the tomato salsa and mix well. Cook for 1 to 2 more minutes.
- Add the milk, salt and pepper and bring to boil while stirring continuously.
- Transfer the stir-fry into a serving bowl and sprinkle spring onion greens and cheese over it.
- Serve immediately with the khakhra pieces.
