Melon and Papaya Scoops in Honey Ginger Dressing

Vitamin A rich papaya and melon scoops tossed together in an unusual zinc rich honey ginger dressing to enhance your immunity.
Ingredients
  • 1 cup papaya scoops (preferably the red variety)
  • 1½ cups muskmelonscoops (kharbooja)
  • 1½ cups watermelon (tarbuj) scoops
  • To be blended into a honey-ginger dressing
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 2 tsp ginger (adrak) juice
  • ¼ tsp crushed pepper
  • salt to taste
  • For the garnish
  • mint sprigs
Instructions
  1. Arrange the scooped fruits in a bowl, pour the dressing and toss gently.
  2. Refrigerate till chill and serve garnished with mint sprigs.
