Sprouted Fruity Bean Salad

Sprouting increases B-complex vitamins of the beans... when tossed into a salad with fruits, it helps to freshen up your skin.
Ingredients
  • 1 cup mixed boiled sprouted pulses (moong, moath beans, chana etc.)
  • ¾ cup chopped apples
  • ½ cup orange segments
  • 2 tbsp cut grapes
  • 2 tbsp sliced white radish
  • ¾ cup chopped lettuce
  • ½ cup chopped spinach (palak)
  • 1 tsp finely chopped green chilli (optional)
  • salt to taste
  • To be mixed into a dressing
  • ¾ cup curds (dahi)
  • 2 tbsp chopped mint leaves (phudina)
  • 1 tsp sugar
  • salt to taste
Instructions
  1. Mix all the ingredients for the salad.
  2. Just before serving top it with the dressing and refrigerate.
  3. Serve chilled.
