Malvani chicken curry tastes great when it is smooth. Around the world you get to see malvani chicken curry prepared in different ways but the typical method of preparing is mostly indian. Malvani chicken curry feels spicy to the tongue. It is known for being an excellent high protein food. It is often served as main dish. Mostly malvani chicken curry is made by stir fry.
Ingredients
  • 1 kg chicken, cut into medium sized pieces for the Curry: 80 ml of water
  • 3 tbsp of refined oil
  • 3 onions, finely chopped
  • a handful of grated coconut
  • a handful of coriander leaves
  • For Malvani masala:
  • 1 bay leaf
  • ½ nutmeg
  • 6-7 cloves
  • 6-7 dry red chillies
  • 10 black peppercorns
  • 1 large cinnamon stick
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp red chilli powder
  • ½ tsp turmeric powder
  • For Coconut Masala Paste:
  • 3 green chillies
  • 5-6 garlic cloves
  • 1 grated coconut
  • ¾th inch of ginger
Instructions
  1. Dry roast all the ingredients of the Malvani masala in a pan and coarsely grind them.
  2. Then grind all the ingredients of the coconut masala into a paste.
  3. In a kadhai, heat oil, add the onions and the ground coconut masala. Stir and cook for about 10 minutes.
  4. Add 3-4 tsp of the ground Malavani masala, red chilly power and salt to taste.
  5. Mix in the chicken and then water. Cover and let it cook on low flame for about 40 mins till the gravy thickens and the chicken is tender.
  6. Garnish with chopped coriander leaves and grated coconut. Serve hot.
