BLT with Guacamole on Sweet Potato Rolls

Ingredients
- 4 Alexia Artisan Sweet Potato Rolls
- 4 slices applewood smoked bacon
- 1 cup baby spinach
- 1 Roma tomato, thinly sliced
- 4 fried eggs
- Guacamole
- 2 California avocados, halved, seeded and peeled
- 1 Roma tomato, diced
- Juice of ½ lime
- Kosher salt and freshly ground black pepper, to taste
Instructions
- In a small bowl, gently mash avocados using a potato masher. Add tomato, lime juice, salt and pepper, to taste, and gently toss to combine; set aside.
- Preheat oven to 350 F. Line a baking sheet with parchment paper. Place Sweet Potato Rolls onto prepared baking sheet and bake according to package instructions; let cool before splitting each roll.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- Serve sandwiches on Alexia Artisan Sweet Potato Rolls with spinach, tomato, egg, bacon and guacamole.
