Kadai Chicken is a spicy chicken dish that is a little dry in nature with a rich aroma given by the Ginger and curry leaves.chicken kadai is well liked among those who love spicy food. The well known indian dish, masala chicken kadai is an excellent high protein food.
Ingredients
  • Chicken Cut into 10 Piece 1
  • Oil 3 tbsp
  • Tomato puree sea salt to taste
  • To Be Ground into paste
  • Onion 3
  • Ginger 1½ Tsp
  • Garlic 1½
  • To Be Powdered
  • Zeera Powder 1 Tsp
  • Dhania Powder 1 Tsp
  • Chili Powder ½ Tsp
  • Turmeric Powder 1 Tsp
  • Garam Masala to sprinkle
  • Pepper 1 Tsp
  • Turmeric Powder 1 Tsp
  • Red Chilies 5 – 6 whole
  • Tamarind extract 5 – 6 whole
  • Jaggery
  • Spring Onion 1 Bunch
  • Chopped Coriander Leaf
Instructions
  1. In a pan, dry roast, pepper, cassia, coriander seeds, cumin seeds, brown cardamom, green cardamom, ginger and garlic paste. In a mortar and pestle, dry roast these masalas and keep aside.
  2. Marinate the chicken with yogurt, salt, turmeric, chilly powder, coriander powder and cumin powder. Keep in the fridge for 15 minutes.Heat oil and add some of the masala for flavor.
  3. Fry onion paste until golden brown.Add ginger and garlic paste and fry for 2-3 minutes.Add the chicken pieces and stir for 5 minutes. Add the tomato puree and sugar to caramelize the flavors. Stir for 5 – 7 minutes.
  4. Add tamarind extract and jaggery and pour it over the chicken. Simmer and cover, stirring occasionally until the chicken is tender. Add water and simmer for another 15 minutes and bring to boil.
  5. Add chopped coriander, chopped spring onions and lime juice for garnish. Serve hot.
