Vegetable Dhokla is delicious snack, quick and easy to make. Colourful and crunchy vegetables transform the simple dhoklas into a special one.My family just loves them .....I am sure your family and friends will love and devour them too.
  • 1 cup curds (dahi)
  • ½ cup besan (bengal gram flour)
  • 1½ cups semolina (rava)
  • ½ tsp baking powder
  • salt to taste
  • For The Tempering
  • a few curry leaves (kadi patta)
  • 1 tsp oil
  • ½ tsp mustard seeds ( rai / sarson)
  • 1 tbsp chopped coriander (dhania)
  • 4 green chillies , finely chopped
  • salt to taste
  • 100 gms. cabbage , finely chopped
  • 100 gms. french beans , finely chopped
  • 100 gms. capsicum , finely chopped
  • 1 tomato , finely chopped
  • 1 onion , finely chopped
  • 100 gms. mushrooms (khumbh) , finely chopped.
  1. Method:
  2. In a deep bowl combine the besan, semolina, curds, baking powder and salt. Mix well.
  3. Pour the mixture in a greased microwave safe dish and microwave at 60% power for 7 minutes.
  4. For the tempering:
  5. Heat oil in a non-stick pan, add the mustard seeds.
  6. When the seeds crackle add the curry leaves and all the vegetables.
  7. Cook the vegetables for 5 minutes, while stirring continuously. Add salt and mix well.
  8. Evenly spread the cooked vegetables on the prepared dhokla.
  9. Cut into equal sized pieces and serve hot with mint chutney or with coconut chutney.
