  • 3 tsp. Olive Oil
  • 1 Onion
  • 1 Shallot
  • 1 tsp. salt & ½ t. pepper
  • 2 Potatoes
  • 3 cup. Broccoli Flowerets
  • 2 Cloves Garlic
  • 4 cup Chicken Stock or veggie if you are vegetarian
  • 6 Oz. Cheddar Cheese
  1. Warm olive oil in large stock pot over low heat
  2. Chop the onion & shallot; add to the oil along with the salt & pepper
  3. Let sweat down for 10 minutes over medium low heat
  4. Cube the potatoes and add to the onion, mix and sauté over low for 5 minutes
  5. Cut broccoli into thumb size flowers and add to the onion/potato mixture
  6. Mince the garlic and add to the stock pot
  7. Heat the chicken stock in the microwave until hot and add to the stock pot
  8. Cover & simmer for 30 minutes
  9. Use and immersion blender to puree the soup
  10. Grate the cheese and stir into the soup until melted
