Don’t know how to induce your kids to eat protein-rich rajma? offer them rice flour rolls with a lip-smacking rajma filling, topped with curd dressing, and watch them relish the experience. Make the rotis just before serving to prevent them from turning chewy.
Ingredients
  • For The Roti
  • 1 cup rice flour (chawal ka atta)
  • 1½ tsp oil
  • salt to taste
  • rice flour (chawal ka atta) for rolling
  • For The Chatpata Rajma Filling
  • 1 cup soaked and boiled rajma (kidney beans) , lightly mashed
  • 1 tbsp oil
  • 2 tsp finely chopped ginger (adrak)
  • 2 tsp finely chopped garlic (lehsun)
  • 1 cup finely chopped onions
  • 1½ cups finely chopped tomatoes
  • ½ tsp turmeric powder (haldi)
  • 2 tsp chilli powder
  • 1 tbsp coriander (dhania) powder
  • ½ cup fresh curds (dahi)
  • 2 tbsp chopped coriander (dhania)
  • salt to taste
  • To Be Mixed Together Into A Curd Dressing
  • ½ cup fresh curds (dahi)
  • ½ cup grated carrot
  • ½ cup grated cucumber
  • salt to taste
  • Other Ingredients
  • 4 tsp red chilli-garlic chutney
  • 8 tbsp finely chopped spring onion greens
Instructions
  1. For the roti:
  2. Combine all the ingredients in a deep bowl and knead into soft dough, using enough water.
  3. Divide the dough into 4 equal portions and roll out each portion of the dough into a 200 mm. (8”) diameter circle using a little rice flour for rolling.
  4. Cook each roti very lightly on a tava (griddle) and keep aside.
  5. For the chatpata rajma filling:
  6. Heat the oil in a non-stick pan; add the ginger, garlic and onions and sauté on a medium flame till the onions turn translucent.
  7. Add the tomatoes, turmeric powder, chilli powder and coriander powder, mix well and cook on a medium flame for 4 to 5 minutes, stirring continuously.
  8. Add the rajma, curds, coriander and salt, mix well and cook on a medium till the mixture dries up, stirring continuously.
  9. Divide the filling into 4 equal portions and keep aside.
  10. How to proceed:
  11. Place a roti on a clean, dry surface and spread 1 tsp of chilli-garlic chutney evenly over it.
  12. Place ¼th of the chatpata rajma filling in a row in the centre of the roti and spread ¼th of the curd dressing over it.
  13. Sprinkle 2 tbsp of spring onion greens over it and roll it up tightly.
  14. Repeat with the remaining ingredients to make 3 more wraps.
  15. Wrap a tissue paper around each wrap and serve immediately.
