Cashew cream with mushrooms present an awesome tasting party special mushroom recipe. The mushroom buttons are stir fried and then cooked with a creamy cashew nut based paste. Simply amazing, when served with naan or Paratha.
  • 2 cups cleaned and chopped mushrooms (khumbh)
  • 1 cup cashewnut (kaju) (soaked in water for 10mins and ground to fine paste)
  • 3 green chillies
  • 1 tbsp ginger-garlic (adrak-lehsun) paste
  • 2 onions
  • salt to taste
  • ¼ tsp turmeric powder (haldi)
  • ¼ tsp chilli powder
  • a pinch of asafoetida (hing)
  • 3 tbsp ghee
  1. Clean and cut mushrooms into 2 halves and cook for 15mins in salt water.
  2. Cut onions and green chillies and fry in lil ghee and grind to fine paste.
  3. Heat ghee in a dekchi.add ground onions and ginger-garlic paste ,hing ,chilli powder,haldi powder and fry for 5mins .
  4. Add cashew paste and 1cup water and stir for about 10mins till the ghee seperates out.
  5. Then add the mushrooms and salt as per taste and cook on low falme for abt 20mins.
  6. Serve hot best with hot phulkas or yellow rice.
