Cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairi+ras, meaning raw/green mango + juice. This is one of my favorite preparation using green mango.
  • Salt To Taste
  • Raw Mango 1 Numbers
  • Hing 1 Pinch
  • Curry Leaves 2 Springs
  • Fenugreek Seeds ¼ Teaspoons
  • Mustard Seeds ½ Teaspoons
  • Red Chilly 1 Tablespoons
  • Oil 2 Tablespoons
  • Coconut Powder ½ Cup
  • Sesame Seeds 2 Tablespoons
  • Black Gram Dal 2 Tablespoons
  • Jagerry 1 Tablespoons
  • Tamarind ½ Cup
  1. Take a pan add black gram daal, sesame seeds dry roast them, add coconut powder cook this till golden in colour.
  2. Switch off the flame and make a coarse powder.
  3. Heat oil in a pan add red chilly, mustard, fenugreek seeds, add curry leaves, pinch of hing, raw mango (cut into small pieces) sauté this,
  4. add salt, jagerry and add water put the lid on cook for some time, then add tamarind juice, cook it and switch off the flame.
