This snack can do double duty for during and after school!
Ingredients
  • 1 cup wholemeal self-raising flour
  • 1 cup Uncle Tobys rolled oats
  • 1 cup caster sugar
  • 140g tub two fruits, drained
  • ½ cup sultanas
  • 125g butter
  • 2 tablespoons honey
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoon boiling water
Instructions
  1. Preheat oven to 180°C/160°C fan-forced. Grease 3 large baking trays. Line with baking paper. Sift flour into a large bowl. Stir in oats, sugar, two fruits and sultanas.
  2. Place butter and honey in a saucepan over medium-low heat. Cook, stirring, for 5 to 6 minutes or until melted. Remove from heat. Combine bicarbonate of soda and boiling water in a bowl. Stir into butter mixture (mixture will become frothy). Add to flour mixture. Stir to combine.
  3. Roll level tablespoons of mixture into balls. Place balls, 6cm apart, on prepared trays. Flatten slightly. Bake for 10 to 12 minutes or until golden. Cool completely on trays. Serve.
Notes
Cooking class: Rolling: Using a measuring spoon to ensure biscuits are evenly sized, roll level tablespoons of mixture into balls.

Tip: Using damp hands will stop mixture sticking while rolling.
