  • 1 cup flour
  • ½ cup brown sugar
  • ¾ cup cocoa powder
  • 1 tbsp baking powder
  • 1 tsp. salt
  • 1 egg + 1 yolk
  • ¼ cup vegetable oil
  • 1 cup milk
  • ½ cup chocolate chips
  1. Preheat oven to 350 F and spray one 12-cup muffin pan with cooking spray. In a large bowl, combine flour, brown sugar, cocoa powder, baking powder, and salt.
  2. In a separate, smaller bowl, whisk together egg and yolk, oil, and milk until well combined. Pour this mixture over the flour mixture and stir with large wooden spoon until a few streaks of flour remain. Then, stir in chocolate chips until evenly dispersed.
  3. Fill muffin cups ⅔ way full with batter (I use an ice cream scoop!) then bake at 350 F for 15-17 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  4. Let cool in pan for 5 minutes before carefully removing to a wire rack to cool completely.
