In chatpata kand, kand is steamed and stir-fried in black salt which gives it lovely tangy taste. As the kand cooked, it absorbs the oil and salt to become a nice purple crispy starter.
- 2½ cups steamed and cubed purple yam (kand)
- 2 tbsp oil
- ¼ tsp black salt (sanchal)
- salt to taste
- ½ tsp chilli powder
- Heat the oil in a non-stick pan and add the purple yam and saute for 2 minutes on a medium flame.
- Add the black salt, salt and chilli powder, mix well and cook on a medium flame for 8 to 10 minutes or till the purple yam turns to golden brown in colour.
- Serve immediately.
