In chatpata kand, kand is steamed and stir-fried in black salt which gives it lovely tangy taste. As the kand cooked, it absorbs the oil and salt to become a nice purple crispy starter.
  • 2½ cups steamed and cubed purple yam (kand)
  • 2 tbsp oil
  • ¼ tsp black salt (sanchal)
  • salt to taste
  • ½ tsp chilli powder
  1. Heat the oil in a non-stick pan and add the purple yam and saute for 2 minutes on a medium flame.
  2. Add the black salt, salt and chilli powder, mix well and cook on a medium flame for 8 to 10 minutes or till the purple yam turns to golden brown in colour.
  3. Serve immediately.
