Easy to handle, bite-sized canapés are perfect for a party. The vegetable canapés described here make use of thin strips of carrot and capsicum perked up with chopped parsley.
  • 5 brown bread slices , lightly buttered
  • 2 tbsp grated paneer (cottage cheese)
  • 1 tbsp cheese spread
  • ½ tsp finely chopped parsley
  • ¼ tsp finely chopped green chillies
  • 1 small carrot , peeled and cut into thin strips
  • 1 small capsicum , cut into thin strips
  • salt to taste
  1. Cut each bread slice into two diagonally.
  2. Mix the paneer, cheese spread, parsley, green chillies and salt.
  3. Spread this mixture evenly over the buttered side of the bread pieces.
  4. Put the carrot strips into boiling water for a few minutes. Drain and then chill.
  5. Arrange two carrot strips and two capsicum strips on top of each bread slice.
  6. Serve immediately.
